Crisp and delicious bread salad


  • 4 D’Italiano with Gusto!™ Brioche Style Sausage Buns
  • 3 tbsp. Olive oil
  • 1 tsp. of salt
  • 2 large ripe tomatoes, cut into 1-inch cubes
  • 1 seedless cucumber, unpeeled and sliced
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1/2 red onion cut in half, thinly sliced
  • 20 large basil leaves
  • 3 tbsp. of drained capers
  • 1 tsp. finely minced garlic
  • 1/2 tsp. of Dijon mustard
  • 3 tbsp. of champange vingear
  • 1/2 cup of olive oil
  • salt and pepper

How to make

  • Warm olive oil in a large saucepan adding in the diced bread. Cook the bread over low to medium heat add a little salt and toss frequently until the bread is browned and crispy for about 10 minutes. (Feel free to add more olive oil if needed)
  • Place all the ingredients in a measuring cup or bowl and whisk together
  • In a large salad bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil and capers. Add the croutons and toss with the vinaigrette. Season liberally with salt and pepper. Allow the salad to sit for about 30 minutes so the flavours have time to blend before serving.
