Ingredients
- 4 D’Italiano with Gusto!™ Sesame Hamburger Buns
- 2 tbsp. low-sodium soy sauce
- 2 tbsp. balsamic vinegar
- 1 tbsp. extra-virgin olive oil
- 3 cloves garlic, minced
- 1 1/2 tsp. Italian seasoning
- 4 portobello mushroom caps, cleaned with underside stems and gills removed
- 4 thin slices baby swiss
- 1 cup arugula
- ¼ cup red onions, sliced
- 2 tomatoes, sliced
- 4 tsp. pesto
- Salt and pepper to taste
How to make
- Mix soy sauce, balsamic vinegar, oil, garlic, Italian seasoning, and black pepper in a bag.
- Add mushrooms, seal, and marinate for 30 mins at room temp or up to 1 hour in the fridge.
- Heat grill to medium. Remove mushrooms from marinade and grill for about 10 mins, brushing with marinade.
- Turn two mushrooms, add cheese, and stack them for the last minute of grilling until cheese melts.
- Grill onions, toast buns if desired.
- Spread pesto on buns, then assemble with arugula, grilled mushrooms, onion, and tomato.
- Serve with a side of chips and enjoy!
