Eggs Benedict and Prosciutto Bagel

  • 2 D’Italiano with Gusto! Original Bagels
  • 4 Eggs
  • 4 slices of Prosciutto
  • 1 cup fresh arugula
  • ½ cup Hollandaise sauce
  • Butter, softened

How to make

  • Place a large pot of water on the stove over medium heat and create a gentle whirlpool in the water by stirring the water with a spoon.
  • Crack an egg into a small bowl and gently place each egg in the swirling water one at a time.
  • Poach the eggs in the warm water for 3-4 minutes for a perfectly runny yolk.
  • Once the eggs are cooked to your liking, remove them from the water with a slotted spoon and place on a plate lined with a paper towel to help absorb the excess water.
  • Slice each bagel in half and toast until they are a golden brown. Once toasted, spread softened butter on each half of the bagel.
  • Layer a bed of fresh arugula and prosciutto on each half of the bagel slice.
  • Carefully pick up your poached egg and lay it overtop the arugula and prosciutto.
  • Finally, generously top the eggs with hollandaise sauce. Serve and enjoy!
