Ingredients.
2 D’Italiano with Gusto! Original Bagels4 Eggs4 slices of Prosciutto1 cup fresh arugula½ cup Hollandaise sauceButter, softened.
Instructions.
Place a large pot of water on the stove over medium heat and create a gentle whirlpool in the water by stirring the water with a spoon.Crack an egg into a small bowl and gently place each egg in the swirling water one at a time.Poach the eggs in the warm water for 3-4 minutes for a perfectly runny yolk.Once the eggs are cooked to your liking, remove them from the water with a slotted spoon and place on a plate lined with a paper towel to help absorb the excess water.Slice each bagel in half and toast until they are a golden brown. Once toasted, spread softened butter on each half of the bagel.Layer a bed of fresh arugula and prosciutto on each half of the bagel slice.Carefully pick up your poached egg and lay it overtop the arugula and prosciutto.Finally, generously top the eggs with hollandaise sauce. Serve and enjoy!
