Ingredients.
1 D’Italiano Gusto black and white sesame bagel, lightly toasted2 slices peameal bacon1 teaspoon butter1 egg, fried½ medium red onion, thinly sliced1 tablespoon grainy mustardHandful of arugula.
Instructions.
Cook bacon in a skillet over medium heat, then set aside.Over medium heat, fry the egg with 1 teaspoon of butter. Season with salt and pepper to taste. Add 1 teaspoon of olive oil and lightly sauté onions until translucent. Season with salt to taste. Spread mustard over the bottom portion of the bagel, top with bacon, red onion, egg and arugula.
