Ingredients.
4 D’Italiano with Gusto!™ Brioche Style Sausage Buns3 tbsp. Olive oil1 tsp. of salt2 large ripe tomatoes, cut into 1-inch cubes1 seedless cucumber, unpeeled and sliced1 red bell pepper1 yellow bell pepper1/2 red onion cut in half, thinly sliced20 large basil leaves3 tbsp. of drained capers1 tsp. finely minced garlic1/2 tsp. of Dijon mustard3 tbsp. of champange vingear1/2 cup of olive oilsalt and pepper.
Instructions.
Warm olive oil in a large saucepan adding in the diced bread. Cook the bread over low to medium heat add a little salt and toss frequently until the bread is browned and crispy for about 10 minutes. (Feel free to add more olive oil if needed)Place all the ingredients in a measuring cup or bowl and whisk togetherIn a large salad bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil and capers. Add the croutons and toss with the vinaigrette. Season liberally with salt and pepper. Allow the salad to sit for about 30 minutes so the flavours have time to blend before serving.
