Ingredients.
6 D’Italiano® Brizzolio Soft Rolls1 tsp. salt1 tbsp. paprika1 tsp. fresh ground pepper3 ½ pounds pork shoulder½ cup chicken broth½ cup brown sugar¼ cup soy sauce1 cup chili sauce1 6oz can pineapple juice1 medium onion - chopped1 whole pineapple - sliced1 tbsp. olive oilBBQ sauce, for serving.
Instructions.
Combine salt, paprika and pepper, and then coat the pork shoulder with the rub mixture.In another bowl, whisk together chicken broth, brown sugar, soy sauce, chili sauce and pineapple juice.Put the chopped onions and carrots in a 5-quart slow cooker. Place the pork on top of the carrots and onions and pour half of the pineapple juice mixture over pork. Reserve remainder. Slow cook on low for 7 to 8 hours. When cooked, shred with forks.Brush slices of pineapple with oil & a light dusting of salt - grill on barbecue until grill marks emerge.Toast D’Italiano® Brizzolio Soft Roll, top with shredded pork, grilled pineapple & a drizzle of BBQ sauce.Serve & enjoy.
