Ingredients.
D’Italiano with Gusto!™ Brioche Style Thick Sliced Loaf450g store bought Christmas pudding or fruit cake75g unsalted butter, melted2 large eggs3 large egg yolks40g sugar225ml 2% milk150ml heavy cream (or whipping cream)1 orange (zest only)2 tbsp. Cointreau (or substitute orange extract)pinch salticing sugar (confectioners sugar).
Instructions.
Preheat the oven to 350°FStart by cutting the Christmas pudding into 2cm chunks. Place in a microwave safe bowl, heat for 1 minute or until softened.Brush the inside of an ovenproof dish (large enough to fit 3 pints) with melted butterCut the brioche into 2 cm chunks adding the Christmas pudding and bread to the buttered dishSpoon the remaining butter over the briocheIn a medium bowl beat together the eggs, extra yolks and sugar until pale and fluffyAdd the cream, milk, orange zest, Cointreau and salt, mixing until well combined.Pour the liquid mix over the brioche and allow the mixture to soak for 15 minutes.Place the bread pudding in the oven for 30-40 minutes or until its set and has a crispy brown colour.Pull the pudding out of the oven and allow it to cool for 10 minutes before dusting with icing sugar and serving.
