Ingredients

  • D’Italiano with Gusto!™ Brioche Style Thick Sliced Loaf
  • 450g store bought Christmas pudding or fruit cake
  • 75g unsalted butter, melted
  • 2 large eggs
  • 3 large egg yolks
  • 40g sugar
  • 225ml 2% milk
  • 150ml heavy cream (or whipping cream)
  • 1 orange (zest only)
  • 2 tbsp. Cointreau (or substitute orange extract)
  • pinch salt
  • icing sugar (confectioners sugar)

Instructions

  • Preheat the oven to 350°F
  • Start by cutting the Christmas pudding into 2cm chunks. Place in a microwave safe bowl, heat for 1 minute or until softened.
  • Brush the inside of an ovenproof dish (large enough to fit 3 pints) with melted butter
  • Cut the brioche into 2 cm chunks adding the Christmas pudding and bread to the buttered dish
  • Spoon the remaining butter over the brioche
  • In a medium bowl beat together the eggs, extra yolks and sugar until pale and fluffy
  • Add the cream, milk, orange zest, Cointreau and salt, mixing until well combined.
  • Pour the liquid mix over the brioche and allow the mixture to soak for 15 minutes.
  • Place the bread pudding in the oven for 30-40 minutes or until its set and has a crispy brown colour.
  • Pull the pudding out of the oven and allow it to cool for 10 minutes before dusting with icing sugar and serving.
