Ingredients:
6 cups of apples – peeled, cored and chopped
¾ of water
½ tsp. ground cinnamon
1/8 tsp. ground cloves
½ white sugar (optional)
Place a large pot or saucepan over medium heat. Combine apples, water, cinnamon and cloves. Bring to a boil, reduce heat and simmer for 10 minutes. Stir in sugar and simmer for 5 minutes or more. You can always add fruits to your apple sauce as well if you are looking for variety.
Once your applesauce is done, cooled and set aside, you can begin making this Nonna-approved apple sauce bread pudding.
Ingredients:
4 cups of bread of your favourite, D’Italiano® bread, cubed
2 cups of milk
1 tbsp. of butter
1 tsp. of vanilla
½ tsp. cinnamon
¼ tsp. nutmeg
½ cup of raisins (optional)
2 egg whites
1 egg
2/3 cup of applesauce
1/3 cup of maple syrup
¾ cup of brown sugar
Using a cutting board or a flat surface, cut bread into 1-2 inches. Place half of the cubed bread on the bottom of a large glass baking dish. In a saucepan, warm the milk and butter together. Do not let the milk boil. Once the butter is melted, remove from heat and add the brown sugar. Whisk together eggs and vanilla in a separate bowl until everything is thoroughly mixed and frothy. Whisk the egg mixture into the milk mixture. Pour the wet ingredients over the first layer of bread cubes allowing the mixture to soak into the bread. Spread the applesauce evenly over the soaked bread and sprinkle with cinnamon, nutmeg and raisins (or nuts). Add the remaining bread cubes, applesauce and the remaining liquid. Sprinkle more cinnamon and raisin on the top, along with a bit of brown sugar or maple syrup. Bake at 350 degrees for 30-45 minutes or until the center is set and the top is crispy and golden brown.
