Capocollo and Fontina Sandwich with Caramelized Onions

This recipe uses:

D'Italiano® Thick Slice Bread

Original or 100% WW Bread

Makes 4 servings.


3 cups (750 ml) thinly sliced sweet onions
1 tbsp (15 ml) each olive oil and butter
  salt and freshly ground pepper
1 cup (250 g) thinly sliced Capocollo
8 tbsp (125 g) shredded Fontina cheese
2 (60 g) fresh baby spinach leaves
8 slices D’Italiano® Thick Slice Bread, Original or 100% Whole Wheat, toasted


Cook onions with oil, butter, salt and pepper in skillet over medium heat for 3 minutes, stirring, until softened. Reduce heat to low and continue cooking for about 20 minutes or until golden brown, soft and caramelized, stirring occasionally. For sandwiches, layer spinach, Capocollo, caramelized onion and cheese on 1 side of 4 slices bread. Place under broiler until cheese melts, about 1 minute. Top with second bread slices. Serve immediately.

Tip: Prepare caramelized onions ahead of time, for quick sandwich assembly.
