Christmas is all about good food and good company, and this pudding is definitely good!
Ingredients
- D’Italiano with Gusto!™ Brioche Style Thick Sliced Loaf
- 450g store bought Christmas pudding or fruit cake
- 75g unsalted butter, melted
- 2 large eggs
- 3 large egg yolks
- 40g sugar
- 225ml 2% milk
- 150ml heavy cream (or whipping cream)
- 1 orange (zest only)
- 2 tbsp. Cointreau (or substitute orange extract)
- pinch salt
- icing sugar (confectioners sugar)
How to make
- 1 Preheat the oven to 350°F
- 2 Start by cutting the Christmas pudding into 2cm chunks. Place in a microwave safe bowl, heat for 1 minute or until softened.
- 3 Brush the inside of an ovenproof dish (large enough to fit 3 pints) with melted butter
- 4 Cut the brioche into 2 cm chunks adding the Christmas pudding and bread to the buttered dish
- 5 Spoon the remaining butter over the brioche
- 6 In a medium bowl beat together the eggs, extra yolks and sugar until pale and fluffy
- 7 Add the cream, milk, orange zest, Cointreau and salt, mixing until well combined.
- 8 Pour the liquid mix over the brioche and allow the mixture to soak for 15 minutes.
- 9 Place the bread pudding in the oven for 30-40 minutes or until its set and has a crispy brown colour.
- 10 Pull the pudding out of the oven and allow it to cool for 10 minutes before dusting with icing sugar and serving.
