D'Italiano® Grilled Cheese Bites

Original or 100% Whole Wheat

12 D'Italiano® Thick Sliced Whole Wheat Bread
2 tbsp (30 ml) olive oil
2 large red onions peeled and sliced 1/8" thick
1/2 cup (125 ml) sugar
1/2 cup (125 ml) red wine vinegar
1/4 cup (50 ml) ruby red port
1/4 cup (50 ml) softened butter
1 tsp (5 ml) chopped fresh rosemary
1 clove minced garlic
7 oz (200 g) triple cream brie or camembert slice 1/4" thick


To make the red onion jam heat the olive oil in a large pot over medium heat. Add the red onion and cook until soft about 10 minutes. Stir in the sugar red wine vinegar and the port. Simmer for 20-25 minutes until most of the liquid has absorbed. Set the jam aside. In a small bowl stir together the butter rosemary and garlic. Lay out the D'Italiano® Thick Sliced Whole Wheat Bread Slices and butter one side of each slice. Place a slice butter side down and top with 2 slices of triple cream brie and 2 Tbsp (30 ml) of red onion jam. Top with another slice of bread butter side up. Repeat with the other slices. Heat a large sauté pan over medium heat. Grill sandwiches 2 at a time for 2 minutes per side until the bread is golden and the cheese is melted. Cut each sandwich on the diagonal to create four small triangles.
