Pesto Brushed Flank Steak with Grilled Vegetables

Makes 6 servings.


750 g flank steak
1 red onion
1 each sweet red and yellow peppers
2 zucchini
1/3 cup (75 ml) light mayonnaise
6 D’Italiano® Sausage Buns, Original or 100% Whole Wheat
1 jar of pesto


In a glass bowl spread both sides of the flank steak with 1/2 cup pesto. Let stand 30 minutes. Cut onion into 1/4-inch slices; pierce with skewer. Stem and seed sweet peppers; cut into sixths. Cut zucchini in half crosswise; slice thinly lengthwise. grill vegetables, medium-high heat, on covered grill, brushing lightly with oil. 5-10 minutes for onions and zucchini. 20 minutes for peppers. Set aside. Split buns; grill until golden. grill steak, covered, 7 minutes per side or until desired readiness. Transfer to cutting board. Tent with foil; wait 5 minutes, slice thinly across the grain. Stir together 1 tbsp pesto and 1/3 cup mayonnaise; spread on bottom half of buns. Layer vegetables then sliced meat. Replace bun tops. Serve warm.
