Greek Grilled Chicken Sandwich

D'Italiano® Thick Slice Bread

Original or 100% Whole Wheat

8 slices D’Italiano® Original or 100% Whole Wheat Thick Slice Bread
2 boneless, skinless chicken breasts
2 tbsp (30 ml) olive oil
2 tbsp (30 ml) lemon juice
2 cloves garlic, minced
1/4 tsp (1 ml) each salt and black pepper
1/2 cup (125 ml) prepared tzatziki
4 lettuce leaves (romaine or leaf)
8 slices tomato
8 slices cucumber
8 slices red onion
1/4 cup (50 ml) crumbled feta cheese


Split chicken breast in half lengthwise and flatten each piece slightly between plastic wrap, using mallet. Combine olive oil, lemon juice, dried oregano, salt and black pepper then toss with chicken breasts. Allow to marinade at least 30 minutes or longer in refrigerator. Remove chicken breasts from marinade and grill or broil for 6 to 8 minutes, turning once and basting, or until cooked through. Toast bread slices, if desired. Spread about 1 tbsp (15 ml) tzatziki on one side of each bread slice. Top each of 4 slices bread with lettuce leaf, 1 piece chicken, 2 tomato slices, 2 cucumber slices and 1 onion slice. Crumble a little feta on each sandwich then top with second slice of bread. Cut in half and serve.
