Grilled Chicken Gremolata

D'Italiano® Crustini Buns

Original or 100% Whole Wheat

4 sandwiches


4 skinless, boneless chicken breasts
3 tbsp (45 ml) olive oil
3 tbsp (45 ml) lemon juice
2 cloves garlic, minced
1/2 tsp (2 ml) dried Italian herb seasoning
1/4 tsp (1 ml) each salt and pepper
4 D’Italiano® Crustini Buns, Original or 100% Whole Wheat
8 tomato slices


2 tbsp (30 ml) chopped fresh parsley, preferably Italian
2 tsp (10 ml) finely chopped garlic (about 3 cloves)
2 tsp (10 ml) grated lemon rind


Place chicken breasts in shallow dish. Combine next 6 ingredients and pour over chicken. Allow to marinate for at least 30 minutes or longer in refrigerator. grill chicken over medium-high for about 10-12 minutes, turning once and basting with marinade. Combine gremolata ingredients. grill buns if desired. Place chicken breasts on bottom buns, top with tomato slices and sprinkle with little gremolata. Drizzle with additional olive oil.
