Grilled Strawberry and Peach Pizza

This recipe uses:

D'Italiano® Thintini

Original or 100% Whole Wheat

Makes 8 pizzas.


Ingredients:

1 cup (250 ml) diced strawberries
1 cup (250 ml) diced peaches
3 tbsp (45 ml) honey
1/2 cup (125 ml) smooth ricotta cheese
3/4 tsp (3 ml) grated orange rind
2 tbsp (30 ml) icing sugar
4 D’Italiano® Thintini™, Original or 100% Whole Wheat, separated

Garnishes

  chopped fresh mint
  icing sugar
 

Directions:

In bowl, combine strawberries, peaches, honey and liqueur tossing to coat. Let stand for at least 30 minutes. In separate bowl, combine ricotta, rind and 2 tbsp (30 ml) icing sugar. Place ThintiniTM halves cut side down on baking tray. Spread about 1 tbsp (15 ml) ricotta topping on each. Strain fruit and reserve juices. Top each ThintiniTM with 1/4 cup (50 ml) fruit. Grill over medium, indirect heat for 3 to 5 minutes or until edges are brown. Sprinkle with chopped fresh mint and icing sugar. Drizzle with reserved juices and serve.
