Mini Pizzas alla Capri

This recipe uses:

D'Italiano® Thintini

Original or 100% Whole Wheat

Makes 4 servings (8 mini pizzas).


1 cup (125 g) diced pancetta, cut into 1/2-inch (1 cm) pieces
4 cloves garlic, finely chopped
1/4 cup (50 ml) olive oil, divided
4 D’Italiano® Thintini™ Original or 100% Whole Wheat, split
32 small grape tomatoes, halved
1 cup (250 ml) diced bocconcini cheese
1/2 cup (125 ml) chopped fresh basil


Cook pancetta and garlic in 2 tbsp (30 ml) olive oil over medium heat, stirring frequently, until slightly crisp, about 3 minutes. Place ThintiniTM halves on baking sheet. Top each with pancetta mixture, tomatoes, bocconcini and basil. Drizzle with remaining 1 tbsp (15 ml) remaining olive oil. Bake at 450°F (230°C) for 5 to 7 minutes or until cheese is melted and bubbly.
