Ingredients:
I’d never made bread pudding before but was inspired by the Cook-Off Challenge. I had a dinner for out-of-town family who we don’t often see and thought this might appeal as a dessert. It passed the taste test with flying colours so here is my “ Deluxe Family Crustini Pudding”
Prep time: 10 minutes Baking Time: 40 minutes
Ingredients:
5 D’Italiano Original Crustini Buns, cut in ¾ inch cubes ( about 10 cups )
2 pears, peeled, cored and diced ( about 2 cups )
2/3 cup dried cranberries
120 gm white chocolate chunks ( or chips )
1 ¼ cups 2% milk
1 ½ cups half and half cream
1 ¼ cups whipping cream
6 large eggs
1 cup brown sugar
½ cup white sugar
6 Tbsp melted butter
2 tsp cinnamon
2 tsp vanilla
½ tsp nutmeg
ice cream and chocolate sauce (optional )
Directions:
Pre-heat oven to 375F.
Put the bread cubes, diced pear, dried cranberries and white chocolate chunks in a very large bowl and gently toss.
In another large bowl, whisk together the milk, half and half and whipping creams, eggs, sugars, melted butter, cinnamon, vanilla and nutmeg. Pour over the bread mix. Stir. Spoon into a greased 9”X13” pan.
Bake at 375 F for 40 minutes until the middle is set. Remove from the oven and let sit 15 minutes before serving. Spoon into bowls and serve with a little ice cream and chocolate sauce, if desired.
