Ingredients:
4 boneless skinless chicken breasts
1/4 cup BBQ sauce
1 medium heart of Romaine lettuce, washed, dried, and torn into small pieces
6 slices of D'Italiano Thick Slice White Bread, chopped into small pieces
4 cloves of garlic, minced and divided
1/3 cup + 2 tablespoons olive oil
1/2 cup plain yogurt
2 teaspoons lemon juice
1 tablespoon mustard
1 pinch salt and pepper
1/4 cup Parmesan cheese
Directions:
1. BBQ your chicken breasts with your BBQ sauce and set aside to rest.
2. Heat two tablespoons olive oil and 2 cloves of minced garlic in a frying pan. Add D'Italiano Thick Slice White Bread and toast for croutons (la piece de triumph of the salad!)
3. Combine 1/3 cup olive oil, plain yogurt, lemon juice, mustard, remaining garlic, salt, and pepper in a small bowl. Stir until well combined. This is your healthy dressing.
4. Slice the rested chicken into bite sized pieces.
5. Toss the dressing with the lettuce in a large bowl.
6. Divide the salad, the chicken, and the croutons, top with fresh Parmesan, and enjoy!
Serves 4-6 people.
With croutons this good, who needs bacon!
