Ingredients:
There's nothing like fresh strawberries and there's nothing like Summertime Fun! Our daughter inspired me to come up with this recipe. Strawberry Compote: 1 cup mashed fresh strawberries, 1/2 cup sugar, 1 tsp almond extract, 2 tablespoons cornstarch, 1 cup water. Toast: 4 beaten eggs, 8 slices D'Itliano 100% whole wheat bread, 4 oz cream cheese, 1/2 cup sugar, 1 tsp. almond extract. Garnish: 2 tablespoons butter, 1/2 cup slivered almonds, 2 tsp sugar. Fresh sliced strawberries. * Butter for fry pan to cook toast.Directions:
Mash strawberries with potato masher, mix with sugar, simmer 5 mins. Add cornstarch mixed in water, simmer until toast is ready. Just before serving add almond extract. Toast: beat eggs, milk together. Mix softened cream cheese, sugar, 1 tsp almond extract. Spread on one side of bread, put top on then cut bread in half. Dip into egg mixture coating thoroughly. Heat butter in frying pan, put toast in pan, cook until golden brown on both sides. For garnish melt 2 tablespoons butter, add almond slivers, cook until golden, mix in sugar. *watch that they don't burn. Place toast on platter, serve with compote, garnish with toasted almonds and fresh strawberries.
