Ingredients:
• I didn’t call this It’s a Date Panini because of a lunch date at a sandwich shop. When I tried this new panini out on my husband he told me it was delicious but asked what was in it that made it different. I told him, “ It’s a date” and we decided that would be a somewhat less cumbersome name than Cheddar, chutney, artichoke, olive, red pepper and date panini.
Ingredients:
¼ cup mayonnaise
1 Tbsp roasted red bell pepper, chopped
3 Tbsp mango chutney
1 tsp Dijon mustard
½ tsp ground cumin
8 pitted dates, finely chopped
1 ½ Tbsp chopped manzanilla olives
3 ounces sharp Canadian Cheddar cheese, sliced
6 marinated artichoke quarters, drained
12 roasted red bell pepper strips
4 slices D’Italiano whole wheat bread
Directions:
Add the mayonnaise and 1 tablespoon roasted red bell pepper to a small food processor or blender and puree until smooth.
Chop any chunks in the mango chutney and combine all with the Dijon mustard and cumin in a small bowl and mix well. Stir in the finely chopped pitted dates and chopped manzanilla olives.
On 2 of the slices of D’Italiano whole wheat bread, spread 1 tablespoon of the mayonnaise mixture and on the other 2 slices, divide the chutney mixture. On the chutney side, layer half of the sliced sharp Cheddar cheese, the marinated artichoke hearts, the roasted red bell pepper strips and the rest of the sharp Cheddar cheese. Top with the other slices of bread, spread side down.
Grill the sandwiches 5 minutes on a pre-heated panini press or indoor double-sided grill. Alternately, you can use a buttered frying pan and flip them to cook both sides.
