Tarts D'Italiano !

Ingredients:6 slices of D'Italiano 100% Whole Wheat Thick Sliced Bread, toasted
½ red onion, diced
½ red bell pepper, diced
1 tbsp. hot jalapeno pepper relish, optional
8 tbsp. butter
6 slices of tomato
4 slices of deli chicken meat
2 red lettuce leaves
Directions:1. In a medium bowl, whisk eggs. Set aside. Heat a large non-stick pan with 1 tbsp. of butter on medium heat. When hot, add onion, pepper and relish. Saute for 3 minutes or until onions are translucent. Add the vegetables mixture into the whisked eggs. Stir to combine. Using the same pan, add 1 tbsp. of butter and heat on medium high heat. When hot, add the egg and vegetables mixture into pan. Cook for about 3 minutes until eggs are set. Turn over, and cook for 3 minutes or until browned.
2. Toast all 6 bread slices, and butter each side with about 1 tbsp. of butter per slice.
3. Place half of the omelette on one toast, topped another piece of toast. On top of the assembled Western sandwich, place 3 slices of tomato, 2 slices of chicken, 1 red leaf lettuce folded over to fit sandwich. Then, place the 3rd piece of toast over the lettuce. Cut the sandwich diagonally. Repeat process for the other sandwich.
