Ingredients:
1/4 cup butter
2 medium zucchini, seeded and chopped
1 small onion, chopped
1 tsp. garlic powder
1 tsp. parsley
2 tsp. thyme
Salt and pepper to taste
2 vine tomatoes, chopped
1/2 cup shaved Parmesan cheese
1/2 cup light sour cream
1/2 cup mozzarella cheese
3/4 cup D'Italiano bread crumbs
1/2 cup bacon, chopped and cooked
1 egg
1/4 cup butter
3/4 cup D'Italiano bread crumbs.

Leave at least 6 (or more) slices of D'Italiano white bread out overnight. Break into smaller pieces and put into a food processor until broken down into small crumbs.
In a pan, melt butter over medium heat. Add zucchini and onion. Cook till al dente. Add garlic powder, parsley and thyme. Take off heat and let cool.
In a mixing bowl, combine tomatoes, Parmesan cheese, sour cream, mozzarella cheese, D'Italiano bread crumbs and bacon. Add cooled zucchini mixture. Blend in egg. Place mixture in a shallow casserole dish or Pyrex.
