Ingredients:
Tomatoe Topping:
6 large Roma tomatoes 1/2 inch dice
1/4 cup green onions thinly sliced
1/4 cup freshly grated Parmesan cheese
1/2 teaspoon ground black pepper
2 tablespoons extra virgin olive oil
1 1/2 teaspoons dried oregano
1 teaspoon dried basil
2 cloves minced garlic
Topping:
1 cup grated sharp cheddar cheese
4 slices DItaliano Whole Wheat Thick Sliced Bread
Garlic Butter:
1/2 cup butter (room Temperature)
1 clove minced garlic
2 teaspoons dried parsley
Directions:
Tomato Topping:
In medium size bowl combine the following ingredients with large spoon until well combined and set aside:
Roma tomatoes, green onions, Parmesan cheese, olive oil, dried oregano and basil, black pepper, minced garlic. Set aside.
Garlic Butter:
In another small bowl combine the following ingredients with a fork until well incorporated:
1/2 cup butter at room temperature
1 clove minced garlic
1 tablespoon dried parsley
Set aside.
Preheat oven to 350 degrees f. Spread garlic butter on both sides of 4 slices of bread. Place onto a non-stick 13 x 9 inch baking sheet. Bake in per-heated oven for 15 minutes. Remove from oven and turn bread over. Divide the tomatoes mixture evenly covering the 4 slices of bread. Sprinkle 1/4 cup cheese on each slice. Place back into 350 degree f oven for an additional 15 minutes until the cheese has melted. Cut each piece in half. Makes 8 large servings. Serve immediately. ENJOY!!!!!!!
