Ingredients:
D'Italiamo Bread (toasted as I go)
3 eggplant (peeled, thinly sliced)
8-10 cups Bolognese sauce (store bought meat sauce)
2-3 cups Parmesan cheese (grated)
1-2 Mozzarella cheese balls (shredded)
3 eggs
Italian seasoned breadcrumbs
vegetable oil (for frying)
Directions:
Place eggplants in egg then in bread crumbs, fry them until golden and place on paper towels to remove access oil. (pat dry)
In a 9x3 baking dish cover the bottom with some sauce, layer of eggplant, layer with toasted D'Italiano bread (cut to fit), some sauce, sprinkle mozzarella, sprinkle Parmesan, repeat 2 more times ending with the cheese on top. Cover with parchment paper then foil bake at 350 degrees in a preheated oven for 35 minutes... Buon Appetito!
