The Rocky Mountain Roast Beef Sandwich with Pancetta, Jalapeno Havarti and Roasted Garlic Avocado Mayo

Ingredients:
D'Italiano Garlic Bread
300-400g Shaved Deli Roast Beef
Spicy BBQ Sauce
6 slices Pancetta Bacon - lightly cooked
Jalapeno Havarti - 2 large square slices
1/4 Vidalia Onion - Caramelized
4-5 large button mushrooms - Fried Golden
3 Red Pepper Rings - Roasted
Banana Peppers
4 Red Onion Rings
Thinly Sliced Garlic Dill Pickles
Chives
Shredded Lettuce
Mayonnaise
Roasted Garlic
Avocado
Roma Tomato
Dijon Mustard
Horseradish
Pepper
Directions:
First make the mayonnaise by combining, 4 tbsp. of light mayonnaise, 5 cloves of Roasted Garlic, half a Roma Tomato, half an Avocado, 1 tsp. of hot horseradish, 1 tsp. of Dijon mustard and some ground pepper to taste. Mix in mini food processor, set aside.
1) Caramelize 1/4 Vidalia onion in 1 tsp. of butter, set aside
2) Slice Button Mushrooms into 12 slices - golden fry in 1 tsp. of butter, set aside
3) Roast 3 Red Bell Pepper Rings in the oven at 350 for 10-15 minutes - turn once, set aside
4) Lightly pan fry Pancetta and set aside
5) Slice Garlic Dills, Shred Lettuce, Slice Red Onion, set out Banana Peppers and dice Chives
7) Lightly pan fry roast beef in spicy bbq sauce until warm and juicy, set aside
8) Slice D'Italiano Garlic Bread into two halves - use one half for the sandwich, cut this half in half. Bake in oven for 5-7 minutes at 400 or until golden brown
9) Remove D'Italiano Garlic Bread from oven and place on baking sheet. Set the top piece of Garlic Bread aside
10) Build the sandwich - place in order, 2 slices of Jalapeno Havarti on the bottom, Shaved Roast Beef, Roasted Garlic Avocado Mayo, Caramelized Onions, Golden Mushrooms, Pancetta, Roasted Red Bell Pepper Rings, 2 more slices of Jalapeno Havarti. Place in oven on broil for 2-3 minutes until cheese is melted perfectly.
11) Remove base of sandwich from oven and continue building - in order, sliced Garlic Dill Pickles, Banana Peppers, Red Onion rings, Shredded Lettuce.
12) Place the top of the D'Italiano Garlic Bread on the finished sandwich and spike with long toothpicks or skewers, cut in half, take a bite and be prepared for sandwich heaven!
