2 slices D’Italiano Original Thick Slice Bread

40 gr grated cheese: Old cheddar is traditional but a mix of cheddar and Swiss cheeses is also delicious!
25 gr Cheese Curds, Cheddar or Gouda
2 tbsp mayonnaise
2 tsp red pepper jelly
¼ tsp freshly ground black pepper
Directions:
Preparation:
1-Heat cast iron pan slowly on medium heat.
2-Mix mayonnaise and freshly ground black pepper; put aside.
3-Spread red pepper jelly on one slice of bread.
4-Distribute curds evenly on the slice; if the curds are big/thick, cut them in half lenghtwise.
5-Spread grated cheese evenly on curds.
6-Finish sandwich with second slice of bread.
7-Spread half of mayonnaise mixture on slice on top slice, carefully covering all corners and crust edge all around.
8-Turn sandwich and put mayonnaise-side down on hot pan. Spread rest of mayonnaise mixture on bread slice that is now on top. Cook for 3-4 minutes, until bottom bread is browned.
9-Turn sandwich, press down slightly and cook until 2nd side until nicely browned.
10-Remove, cut in half and enjoy with passion!
