Ingredients:
8 oz chopped fresh mushrooms
2 cups chopped rapini
1 cup chopped onions
1 seeded, chopped orange bell pepper
1 garlic clove, minced
2 tablespoons olive oil
1 250g package cream cheese, softened
1/4 cup light cream or milk
6 eggs
6 pieces day day old D'italiano bread torn into pieces
1-1/2 cups shredded Cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
150 grams smoked salmon, chopped (omit if serving to vegetarians)
Directions:
In a large skillet, saute the mushrooms,rapini, onions, orange pepper and garlic in oil until vegetables are tender. Drain. Set side.
Beat the cream cheese and cream/milk together until smooth. Beat in eggs. Stir in the bread, cheese, salt,pepper and sauteed vegetables. If using smoked salmon, add it here.
Place in greased 9X13 baking dish. Bake, uncovered, at 350 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 5-10 minutes before serving.
