6 Strips of Bacon
6 Slices of D'Italiano Bread, Crust removed
6 Medium Eggs
1/4 Cup Margarine or Butter melted
1/4 Cup Maple Syrup
One 6-Muffin baking dish
Directions:
Preheat oven at 375 F
Lightly butter cupcake pan
Mix melted butter and syrup in a bowl.
Flatten bread slices with a rolling pin and dip both sides of the flattened bread into the muffin/cupcake wells to form a cup being careful not to rip holes into the bread.
cut 1 piece of bacon in half and place it into the bread cup, crack one egg in each cup over top of the bacon trying to keep the yolk unbroken.
Set in oven for aprox 20 mins or until egg is cooked as desired and the bread has firmed up.
