Ingredients:
2 tablespoons finely chopped green scallion onions
1 teaspoon minced jalapeno pepper
2 tablespoons minced celery stalk (from the heart of the celery)
1 teaspoon minced orange peel (without white pith)
2 tablespoons white vinegar
4 tablespoons fresh squeezed orange juice
1 quarter teaspoon of mustard seeds
1 tablespoon of olive oil
1 half cup of finely diced fresh pineapple
4 tablespoons ginger ale soft drink
8 Slices of D'Italiano White or Brown Thick Slice Style Bread
1 half cup of softened butter
2 packed tablespoons of brown sugar
1 eighth teaspoon of dry powdered ginger
300 grams of shaved deli style ham
8 (3 inch square or equivalent) thin slices of Swiss Cheese
Directions:
This recipe makes 4 sandwiches and takes approximately 60 minutes to prepare.
Prep and combine the first 7 ingredients in a small bowl. This is your relish seasoning mixture.
Add olive oil to a heated fry pan followed by the pineapple.
Fry pineapple for about 1-2 minutes on high heat until the pineapple dice begins to brown.
Add the ginger ale to deglaze, then stir in the prepped 7 ingredient relish seasoning mixture. Heat and stir until liquid evaporates, 1-2 minutes more.
Remove pineapple relish mixture from heat and set aside.
Next, on a cookie sheet or large bread board, lay out D'Italiano Thick Slice Style bread slices. After laying out slices, check for match up before the next step so your slices match for grilling.
Mix butter, brown sugar and ginger until creamy.
Using the back of a teaspoon, butter the outsides(bottom sides) of the bread slices you have set out. Be sure to spread mixture to edges of the bread slices.
Divide and place equal amounts of ham on 4 left side slices of bread.
Divide and place equal amounts of cheese on 4 right side slices of bread.
Divide and spoon equal portions of pineapple relish on top of the cheese slices (Save a bit for garnish.)
Carefully, flip the ham side onto the cheese and relish side. Lift, using a spatula and grill in hot fry pan (one at a time) or on a large hot griddle (4 at a time). Grill on second side after flipping each sandwich over. About 2 minutes per side usually makes nice grill marks and gives good texture. Check by lifting a corner with the spatula. Using the spatula, lift from the pan or grill to a cutting board. Cut across at a slight angle, plate and serve immediately.
