Ingredients:
2 large Granny Smith apples, peeled, cored and slicedDirections:
In a medium bowl, toss the apple slices with the lemon juice. In a saucepan over medium-high heat melt 1 Tbsp butter. Spike in the brown sugar, cinnamon, Herbs de Provence and salt. Stir until the sugar is dissolved. Add the apple slices and toss the pan to coat the apples with the butter sugar mixture. Don’t Fumble! Reduce heat to medium-low and simmer a few minutes until the apples are tender but not mushy. Remove the pan from the heat and set aside to cool slightly. Lightly butter four slices of D’Italiano whole wheat bread and layer the brie, pancetta and apples on two slices of the bread and top with the remaining two slices. Press down gently. In one shallow bowl, Scramble the eggs with a fork. In another shallow bowl, combine the chopped pecans and panko crumbs. Dip both sides of one sandwich into the eggs then Turnover to press into the pecan mixture and coat well. Repeat with the other sandwich. Cook sandwiches in butter in a saucepan over medium heat until golden brown and crunchy on both sides. Remove to a cutting board and let cool for a minute before you Tackle it – no need to Rush – then cut them diagonally and take a big bite. This sandwich is Out of Bounds!
