4 slices of D'Italiano bread
2cups lobster
1/2 C shredded jalepeno cheese
1 C tarragon hollandaise sauce
Directions:

slowly melt 1/2 c butter and keep warm. Place 3 egg yolks on top of a double broiler and whisk till thick. Add 3 Tbsp boiling water 1 Tbsp at a time. Then beat in 1 and 1/2 Tbsp Sherry 1/2 tsp tarragon, 1/4 tsp salt and a pinch of cayenne. Beat sauce well and slowly add melted butter.
Broil both sides of the bread sprinkle with grated cheese and broil till melted.Divide lobster among the 4 slices of bread and top with hollandaise sauce. This is delicious served with a simple salad of greens drizzled with a tarragon vinaigrette.
