Ingredients:
Savoury and sweet, soft and crunchy, mild and spicy, this focaccia is a contrast of flavours and textures. The twist is the sweet potato- white wine vinegar spread.
INGREDIENTS:
1 small ( 6 oz.)sweet potato
3 Tbsp white wine vinegar
1 D’Italiano Original Focaccia
3 large strawberries, sliced
3 Tbsp chopped pecans
1 ½ Tbsp sliced green onions
10 pickled mild jalapeno pepper rings
1 Tbsp mayonnaise
1 ½ oz.Brie cheese, cut in slices
Directions:
Poke the sweet potato all over with a fork and microwave for 3 – 3 ½ minutes until very soft. Cool slightly. Remove the skin and mash the pulp. Add the white wine vinegar and mix well.
Spread the bottom half of the D’Italiano Original Focaccia with 3 tablespoons of the sweet potato mixture, then the sliced strawberries, chopped pecans, sliced green onions and pickled mild jalapeno pepper rings. On the cut side of the top half of the focaccia, spread the mayonnaise and arrange the slices of Brie cheese. Flip the top half onto the bottom.
Grill in a pre-heated double-sided indoor grill for 3 minutes or until cheese has melted. Cut in half. Serves 1.
Note: You can cook this in a frying pan if you want but you have to flip it.
